Origin & Harvest

Every bottle begins on a single estate in the heart of Jaén, Spain. By working with an award-winning producer who has tended the same groves for generations, we ensure our oils reflect the true character of the region.

Our Picual olives were harvested in October of 2025, and our Hojiblanca and Arbequina were harvested in early November of 2025.

Each of our oils have an extraordinary fatty acid profile, with very low acidity and high levels of natural antioxidants.

Our olives are harvested early to capture a richer profile of antioxidants and vibrant flavors. Every bottle is sourced exclusively from the most recent season and never blended with past harvests. This ensures you are always pouring oil at its peak freshness.

One Estate

Each bottle begins on a single family-owned estate in Jaén, where the same old trees have been flourishing for centuries. We move quickly from branch to bottle, cold-pressing the olives within two hours of harvest to preserve their freshness and character.

One Olive

Each oil is made from a single olive variety, allowing its unique character to shine. Picual is vibrant, Hojiblanca is herbaceous, and Arbequina is mellow. There’s truly an oil for every occasion.
