BEHIND THE BOTTLE
Our olives are harvested early to capture a richer profile of flavors and antioxidants. Every bottle is sourced exclusively from the most recent season and never blended with past harvests. It’s how we make sure that what you taste is exactly what we harvested.
Each bottle begins on a single family-owned estate in Jaén, where the same old trees have been flourishing for centuries. We move quickly from branch to bottle, cold-pressing the olives within two hours of harvest to preserve their freshness and character. Every pour is olive oil at its peak.
Each oil is made from a single olive variety, allowing its unique character to shine. Picual is vibrant and grassy, Hojiblanca is fragant and balanced, and Arbequina is mellow and fruity. Every bottle offers a pure expression of the fruit and its juice.
Love this olive oil! Spanish oil is some of the best olive oil in my personal experience. This one was no exception. It’s really smooth but flavorful! Doesn’t have that back of the throat burn like some olive oils, which is surprising because it’s an early harvest which can be a bit more earthy and peppery. It’s more buttery, nutty, and slightly fruity. It also has a hard to name umami element. Perfect finishing oil to elevate any dish. Can’t wait to drown my tomatoes in it as I cling onto these last summer days.

This is a super-premium olive oil. Finishes with a really peppery kick which is great for waking up a salad. I also really like it as a dipping sauce for my baguette.
