One Harvest.
Our olives are picked early in the season, while still hard and green. Though the yield is smaller, harvesting early brings brighter flavors and aromas, producing oils rich in antioxidants like polyphenols and tocopherols.
One Estate.
Each bottle begins on a single family-owned estate in Jaén, where the same old trees have been flourishing for centuries. We move quickly from branch to bottle, cold-pressing the olives within two hours of harvest to preserve their freshness and character.
One Olive.
Each oil is made from a single olive variety, allowing its unique character to shine. Picual is vibrant, Hojiblanca is herbaceous, and Arbequina is mellow. There’s an oil for every occasion.
